The aim of the presented analysis was to work out the guidelines for application of the constant on-line measurements of chosen visual features of beef quality in the plant. Nowadays the beef production requires such a possibility to apply measurements and researches on the production line. In the present article, the assessment of possibilities to apply on the industry scale objective measurements that are carried out in laboratory conditions is achieved. The most important beef objective researches are taken into account – texture measurements, components of colour measurements and computer image analysis. Guidelines and assumptions to the procedure during on-line implementation of beef features evaluation are divided into two categories, to improve their applicability: necessary to apply measurements and researches on-line and optional that may facilitate application.
