ABSTRACT
An increase in applying computer image analysis in different research areas has recently been observed. The food quality assessments performed in order to replace classical instrumental methods is one of the areas of interest. The objective of this work was to develop a vision system for the assessment of potato quality and to compare the results with the ones obtained from the instrumental method. For this purpose, the Denar variety of potato was examined and analyzed. The characteristic qualities typical for the Denar tuber were chosen. The assessment results were made on the basis of a comparison between the typical qualities of the Denar tuber and those of the particular tuber examined. During the research, digital photos of the potatoes were taken. These photos were the source of assessment in the computer program developed during the study.
